  • 400g minced beef, not too lean  
  • 1 small red onion, very finely chopped 2 garlic cloves, very finely chopped
  • 100g pistachios, chopped, plus more for garnish
  • 1 egg
  • 1 fresh red chilli, deseeded and very finely chopped
  • A big handful of parsley leaves, finely chopped 
  • A big handful of coriander leaves, finely chopped 
  • ½ teaspoon fennel seeds
  • 1 teaspoon cumin seeds, toasted 
  • t aspoon coriander seeds, toasted
  • ½ teaspoon ground cinnamon
  • Olive oil
  • 2 ripe apricots
  • 1 tablespoon pomegranate molasses
  • 20g butter
  • Juice of ½ lemon, to taste
  • Yogurt, to serve Turkish chilli, to serve

    Begin by making the koftes. Place the minced beef in a mixing bowl and add the onion, garlic, pistachios, egg and chilli. Sprinkle in the herbs, keeping a small handful to the side to garnish the dish later.

    Grind the fennel, cumin and coriander seeds together in a pestle and mortar or spice blender until fine, then stir in the cinnamon and then add to the kofte mix.

    Mix together the kofte ingredients with your hands and season well with salt. Place the Signature Cast Iron Skillet on a medium heat and fry a tiny bit of the meat so you can check the seasoning. Add more chilli, salt or spice to taste

    Remove the skillet from the heat and then roll the meat into little balls, no bigger than the size of a golf ball and place in the fridge for an hour to firm-up.
