For the Cranberry Filling:
  • 1 cup frozen cranberries
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons brown sugar
  • 1 teaspoon grated orange rind
  • Splash water
For the Pastry:
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 100g Camembert, cut into small cubes
  • Rosemary to garnish

    In a small saucepan over medium heat, combine the cranberries, thyme, brown sugar, water, and orange rind. Cook for 5-7 minutes until the cranberries soften and the mixture thickens slightly. Set aside to cool.

    Preheat the oven to 200°C / 400°F / Gas Mark 6

    Roll out the puff pastry on a lightly floured surface and cut into star shapes using a medium-sized star-shaped cookie cutter. Place the pastry stars onto a lined baking tray and chill for 30 minutes. Brush each star with egg wash. Place a piece of Camembert onto each star and bake in a preheated oven for 15-20 minutes, until golden and puffed.

    Once baked, place onto a serving platter and top each star with the cranberry sauce and garnish with gold-dusted rosemary. Enjoy warm as a festive appetiser or snack.
