Baked Cherry Dessert Cake

Cooking 40/45minutes

  • 100 g plain flour
  • 75 g caster sugar
  • 1 pinch salt
  • 3 eggs
  • 1/3 l milk
  • 500 g black cherries, fresh butter for greasing the dish
  • vanilla sugar for dusting

1. Preheat the oven to 190°C/380°F. Clean the cherries and remove the stems and stones.
2. Butter the dish. Spread the cherries in the dish and sprinkle a little vanilla sugar on top.
3. Beat the eggs and sugar together, slowly add the flour and 1 pinch salt, mix well. Add the milk to make a batter about the same consistency as a pancake batter.
4. Pour the batter in the dish over the cherries. Bake in the hot oven for approx. 40/45 minutes until golden brown.
5. Dust with vanilla sugar and serve hot or cold (with cream or ice cream).

Note
You can remove the stones of the cherries or not. If you use the cherries with the stones, they will keep their shape and give a stronger flavour to the cake.
