Serves 1
Preparation and Cooking 10 minutes
- 2 large eggs, separated
- salt and freshly ground black pepper
- 1 tsp of mixed herbs
- 2 tbs finely grated cheese, e.g. parmesan
- 1 tbs butter
1. Beat the egg yolks with the salt, pepper, herbs and cheese.
2. Beat the egg whites until stiff.
3. Heat the butter in the frypan until hot but not brown.
4. Fold the yolk mixture into the whites.
5. Pour the mixture into the pan, spreading evenly over the base. Cook for 2 – 3 minutes then fold in half. Turn off the heat, cook for a further minute, then serve immediately.
