Serves 4
Preparation and Cooking 45 minutes
- 24 large prawns / jumbo shrimps
- 4 garlic cloves
- 4 tablespoons olive oil
- 1 small red chilli
- a little coarse sea salt
1. Rinse the large prawns, but do not remove the shells, and dry off any excess moisture with paper towels. Peel the garlic cloves and slice them thinly with the chilli.
2. Heat the oil over a medium heat for about 3 minutes in the frying pan. When it is hot, add the garlic and chilli and fry for 1 minute, then add the large prawns. Fry and stir for 2-3 minutes each side. Add salt while cooking.
3. Serve out the large prawns on to 4 warm plates.
4. Serve with saffron rice.

Note
This is an extremely simple way to cook shrimps. The black enamelled surface of the pan promotes a delicious caramelisation of the large prawns and the garlic and chilli add a piquant edge.
