Grilled Steak with Cream and Blue Cheese Sauce

Serves 4
Preparation and Cooking time 15 minutes
- 4 beef steaks, approximately 2 cm thick (filet)
- a little coarse salt
- freshly ground black pepper
- oil to grease
Sauce :
- 125 ml liquid crème fraîche (heavy cream)
- 50 g Bleu de Bresse or Roquefort crushed
- 1 tablespoon of fresh chopped parsley
- freshly ground black pepper
1. Heat the pan over a medium heat. Check that it is ready for cooking by throwing a few drops of water on the surface. The water will sizzle and evaporate immediately if the pan is hot enough. Do not use the pan before it is hot enough.
2. Lightly grease the pan with the oil. Just before cooking, make sure that the meat is not damp (otherwise dry with kitchen paper), then season on both sides.
3. Cook for:
2-3 min (approximately) on each side for a rare steak
4-5 min (approximately) on each side for a medium steak
6-7 min (approximately) on each side for a well-cooked steak
4. When cooking the meat, prepare the sauce. Heat the crème fraîche in a pan, add the crushed Bleu de Bresse or Roquefort, the parsley and the pepper. Coat the steaks. Serve hot.
