Fruits of the Forest Fondue

Serves 6-8

Cooking 20 minutes

  • 375 g (12 oz) can raspberries in natural juice
  • 375 g (12 oz) can red cherries, pitted and drained
  • 375 g (12 oz) can blackberries, drained
  • 2 tablespoons icing sugar, sifted
  • 2 tablespoons brandy or kirsch
  • 2 tablespoons cornflour
  • 150 ml (1/4 pint) low-fat fromage frais or natural yoghurt

1. Sieve or purée the raspberries and make up to 300 ml (1/2 pint) with the natural juice. Place in the fondue pan with the cherries and blackberries.
2. Stir in the icing sugar and place the fondue pan on the hob over a moderate heat to warm through.
3. In a small bowl, blend together the brandy or kirsch and cornflour and stir into the fondue. Continue to cook for 2-3 minutes, stirring until the mixture thickens slightly.
4. Transfer the fondue pan to its lighted spirit stove. Stir in the fromage frais or natural yoghurt, and keep warm until required.
5. For dipping: offer a selection of pink and white marshmallows, chunks of banana, tiny meringue shells and ratafia biscuits.
