Serves 4
Preparation and Cooking 2 1/2 hours

1 tbs olive oil

1 medium onion, sliced

2 carrots, sliced

500g lean braising steak

400g can of plum tomatoes

1 tbs of hot mustard

3 level tsp dried thyme
-
250ml dry white wine
-
100g oyster mushrooms, quartered

salt
-
freshly ground black pepper
-
freshly chopped parsley for garnish
Oven 150ºC/300ºF, Gas 2
1. Heat the oil in the cocotte base, add the onion and carrot, fry until both are just beginning to brown. Lift out.
2. Cut the beef into 2cm cubes, add to the hot oil and brown on all sides.
3. Return the vegetables to the pot together with the tomatoes chopped with their juice and all other ingredients. Stir well.
4. Cover and simmer gently on the hob, or oven cook 150°c/300°f/Gas 2 for 2 - 21/2 hours, or until beef is very tender.
5. Garnish the top with lots of fresh chopped parsley just before serving.
