Tutti Frutti Granola with Honey Yogurt

Make your own super crunchy breakfast with a yummy topping that will fill you up until lunch.

  

Makes 4 - 5 servings for breakfast

Ingredients:

Granola

  
      
  • 2 tablespoons butter   
  • 2 tablespoon brown sugar   
  • 4 tablespoons golden syrup   
  • 150g (1½ cups) jumbo rolled oats   
  • 3 tablespoons flaked almonds   
  • 2 tablespoons pumpkin seeds   
  • 1 tablespoon sesame seeds
  

Topping

  
      
  • 125g (5½ oz) ready to eat dried tropical fruits (pineapple, mango, papaya & melon) chopped into small pieces*   
  • 250ml (1cup) Greek yogurt   
  • Honey to drizzle

Preheat the Oven:  150°C / 300°F / Gas Mark 2, pre-heated
Fan oven: 130°C*

Making the granola

  
      
  1. Melt together the butter, brown sugar and golden syrup in a saucepan *
  2.   
  3. Mix together the oats, nuts and seeds into a mixing bowl.
  4.   
  5. Pour in the melted butter, sugar and syrup*
  6.   
  7. Stir the ingredients together until well mixed and then spread the mixture out onto a large non stick baking tray.
  8.   
  9. Place into the oven to cook for 25–30 minutes, turning once half way to give an even colour*
  10.   
  11. Once the granola is golden brown remove the tray from the oven*
  12.   
  13. Allow to cool before breaking the mixture up into small clumps.
    If not using straight away you can store in an airtight container for up to 2 weeks.
  

To serve

  
      
  1. Put some of the crunchy granola mix into your cereal bowl and add a handful of the chopped dried fruit.
  2.   
  3. Top with 3 - 4 tablespoons of yogurt and drizzle over some honey. Yummy.
